- Taste: Caponata is carefully produced by the Valdibella cooperative to bring out the varied and refined taste of this Sicilian classic. Its taste is well-balanced: Not too sweet, not too sour and with a balanced ratio of ingredients. Simply delicious, we think!
- Quality features: Tomato passata serves as the basis for caponata. This classic aperitif is refined with pieces of eggplant and peppers, extra virgin olive oil, pitted green olives, red onions and capers.
- Use: Caponata is a must at any Sicilian aperitif. It can be enjoyed with bread or pastries. Traditionally, however, it is simply eaten lukewarm and without anything added.
Cultivation and ecology
This is how the ingredients for caponata are grown:
- Cultivation method: Organic farming.
- Producers: The tomatoes are grown by Agostino Daidone, Andrea Lanfranca and Piero Mulè in Camporeale. The Valdibella cooperative processes the tomatoes into tomato passata and tomato paste. The eggplants and peppers are grown by the Valdibella cooperative and the Terramatta cooperative. The capers grow wild on the small island of Pantelleria, southwest of Sicily. Valdibella uses the "Addio Pizzo" label to declare that it does not pay protection money to criminal organizations.
