This kernotto is a triple delight: all the produce used comes from innovative, diverse Swiss organic farming, the colorful mix is beautiful to look at and it allows you to conjure up a delicious, wholesome dish without much effort. Carrots, beetroot and kale are carefully prepared by Sara and Patrick and gently dried at low temperatures. Surplus stored vegetables are put to good use in this product. The vegetable kernel otto develops a beautiful reddish color during cooking.

Taste and use

That's what makes this spelt kernel otto from Switzerland so special:

  • Taste: The Kernottos from Bio-Hofwerk are characterized by a pleasant bite - not too soft and yet firm to the bite. The spelt kernels have a nutty flavor. Carrots, kale and beetroot give the dish a sweet and spicy taste.
  • Quality features: Even in the packet, this mixture is simply beautiful to look at - a colorful mix that turns slightly reddish when cooked. Spelt, carrots, kale and beetroot all come from innovative, diverse Swiss organic farming. This product can be used to make use of surplus stored vegetables or those that have grown crooked: Carefully prepared, they are gently dried at low temperatures.
  • Use: Sauté the kernotto with the onions and garlic, deglaze with white wine or vegetable stock and then cook just covered with vegetable stock for about 35 minutes on a medium heat until soft. Add a little water if necessary. Finish with grated cheese, crème fraîche, fresh herbs or spices to taste. Enjoy your meal! One pack is enough as a main course for two people or as a side dish for three to four people.

Cultivation and ecology

This is how the ingredients of the Kernotto are grown:

  • Cultivation method: Organic farming. No copper or other biological pesticides are used. Some vegetables such as kale are grown in strips, alternating with other crops to create small-scale diversity.
  • Producers: Patrick and Sara Guarisco took over their farm in Wilen near Neunforn from Sara's parents. They run a diverse, innovative farm on the 15 hectares of organic farmland: in addition to asparagus, they also grow berries, pumpkins, old grain varieties and fungus-resistant "Souvignier Gris" grapes. Sara's brother and her father help them with all the work that needs to be done on the farm. This includes harvesting and preparing the asparagus every day during the season. In addition to farming, the family runs a farm store and Sara teaches yoga classes.
