Valdibella produces this extra virgin olive oil from the "Cerasuola" olive variety and the two stronger, regional Sicilian varieties "Nocellara del Belice" and "Biancolilla". The olive oil impresses with its good balance and is versatile. In addition to organic cultivation, the time of harvest and the immediate processing of the olives are decisive for the quality.

Taste and use
That's what makes this Sicilian olive oil so special:
- Taste: This oil reveals notes of fresh grass and artichokes and is a well-balanced oil - fruity, medium to slightly bitter and medium spicy. The spiciness is due to the healthy polyphenol content of the olives, most of which are harvested while still green. If the fresh olive oil is too strong for you, you can store it for 1-2 months before use to make it a little milder.
- Quality features: There are great differences in the quality of extra virgin olive oil. Unfortunately, many products on store shelves today hardly deserve this designation. The time of harvest is decisive for the quality. Most olives should still be green when they are brought to the mill. The fruit must then be processed within 24 hours. First they are cleaned and crushed into olive paste together with the stone. This paste is stirred until the oil comes out. It then goes into the centrifuge, where the pure olive oil is cold-extracted. From there, it is pumped into steel tanks and only filled into canisters when required.
- Use: This strong oil is ideal for fresh dishes such as grilled vegetables, salads, fresh bread and also for seasoning meat. As the oil has only been decanted and not filtered, it still contains many healthy suspended particles from the olives. It is better not to heat this part of the fruit, as otherwise valuable ingredients will be reduced. If the suspended particles have settled in the canister and the oil is clear, it can also be used for frying. Once opened, the oil in the opened canister should be consumed within 6 months. To extend the shelf life, the oil can also be filled into smaller bottles and stored in a dark place.
Cultivation and ecology
This is how the olives are grown:
- Cultivation method: Organic farming. The oil is pressed from three local olive varieties: "Cerasuola" (70%), "Nocellara del Belice" (20%) and "Biancolilla" (10%). The olives are harvested by hand during the day from October to the end of November. The old olive trees are grown organically together with citrus fruits. We had to adjust the prices again for the 2024 harvest, as the harvest volume fell by around 20 percent compared to the previous year. Firstly, fewer and smaller olives could be harvested for two reasons: In April, it was windy and cold - many blossoms did not survive. This was followed by a very dry and hot summer, which meant that the olives did not grow well and were much smaller than usual. In addition, due to the lack of rainfall in winter and spring, emergency irrigation with collected rainwater was impossible.
- Producers: The olives come from various members of our partner cooperative Valdibella. In order for producers to cover their costs, they now need 10 euros per kilogram of olive oil. Then there is the processing, storage, bottling, packaging and transportation. A really good olive oil is such a valuable product that it is also known as "green gold". Valdibella uses the "Addio Pizzo" label to declare that it does not pay protection money to criminal organizations.
This is how the price is made up
The producers receive 10 euros per kilogram of olive oil from the Valdibella cooperative.

The same thing happened to me as Thomas Moser, I wanted to order another 5L canister of olive oil. The Valdibella olive oil is very fine and, according to your information, also sustainably/organically produced, top quality and fairly traded. However, I don't fully understand your reasoning. If you now pay the producers CHF 55 instead of 42 per 5L, the price has not yet risen from CHF 86.40 (paid on 15.07.2023) to 119.40 (price today), it remains CHF 20. I don't have to assume that the transportation costs and your internal costs will increase in proportion to the producer's surcharge, do I? I would be very interested in a detailed breakdown of the price increase and the composition of the total price. I think your project, your products and your communication are very good and I've enjoyed buying from you so far - so I'm asking you for full transparency here.

Thank you for your follow-up. If you scroll down our product page, you will find a breakdown of the sales price for each product by individual link in the value chain. In my reply to Thomas Moser on January 7, 2024, I expressed my hope for a better harvest year in 2024. Unfortunately, things turned out differently: the 2024 olive harvest in Sicily was again 20% lower than in the previous year. As a result, we are now paying the producers in Valdibella CHF 60 per canister (July 2023: CHF 42). The fixed costs of transportation (long distance) have also increased, while the variable costs (customs duties, compulsory storage) have increased in line with the value of the goods. We now pay CHF 24.41 per canister for transportation and logistics (July 2023: CHF 18.31). Our contribution margin (fixed costs for procurement & marketing/sales) is CHF 31.26 or around 30% of the value of goods (July 2023: CHF 23.45).

I'm actually a big fan of oil and we've already ordered it several times. But the price increase compared to a year ago is enormous. The oil was around 37% cheaper back then....

Thank you for your honest feedback. We bought the 5l olive oil canister from the 2022 harvest from our partner cooperative Valdibella for CHF 42. For the oil from the current 2023 harvest, Valdibella had to increase its share to CHF 55. Producers now receive EUR 1.50 instead of EUR 0.90 for a kilogram of olives.
There are two main reasons for this:
1. fewer and smaller olives could be harvested: It was wet and cold in April - many blossoms did not survive. This was followed by an exceptionally dry and hot summer, which meant that the olives did not grow well and were much smaller.
2. energy costs have risen significantly, making processing, especially pressing, more expensive.
I can well understand if the new sales price is considered too high, regardless of the above reasons. We are committed to fairness along the entire value chain and support our producers even in poor harvest years. If we were to freeze purchase prices at these times, they would no longer be able to maintain their crops to the highest ecological and social standards. Together with Valdibella, we are now hoping for a much better harvest year in 2024!
