Taste and use
That's what makes this polenta bramata from Switzerland so special:
- Taste: Bramata is the coarse polenta: it takes a little longer to prepare than semolina, but the unique taste is particularly pronounced. These country corn varieties taste really authentically of corn. A real treat and also appealing in terms of color!
- Quality features: This bramata is produced from genetically diverse, old varieties. The plants produce corn kernels of different colors and shapes - depending on the corn variety, this variety of colors can be found on each cob. The grains are ground in the Näfels corn mill on a special stone mill. This produces three products at the same time: Bramata polenta, medium-fine polenta and corn flour, each in roughly equal proportions.
- Use: With a cooking time of around 75 minutes, this bramata requires a little more patience than usual. However, the effort for the special taste experience is well worth it!
Cultivation and ecology
This is how maize is grown:
- Cultivation method: Organic farming. The mixture of land corn varieties for this polenta was worked out by Egon Tschol from Aspehof over years of trials. In 2020, Grüthof was allowed to take over the valuable seeds. In contrast to hybrid maize, the population varieties from Grüthof are naturally reproducible. They comprise a much greater genetic diversity, which is expressed in the many colors and shapes of the corn kernels on the cob.
- Producers: Beatrice Peter and Jorge Vásquez and their team run the diverse Grüthof farm near Wildensbuch in the Zurich wine country. Free-range chickens and mountain sheep graze between the high trunk trees. On their arable land, they grow a wide variety of specialty crops, such as camelina, lupins and varieties of maize. Jorge says: "I love trying out new things, preferably things that no one else is doing." They mainly market their products directly, as close customer contact is important to them.
