These crispy sweet seeds of the "Mollar" pomegranate variety come from the small organic farm of the inspiring producer Manolo Jiménez Perez and his family in the Valle del Guadalhorce in southern Spain. They use fruit that is unsuitable for fresh sale or is surplus to requirements. The seeds are gently dried so that we can enjoy them as a delicious topping on salads or as an addition to muesli.

Cultivation and ecology
This is how pomegranates are grown:
- Cultivation method: Organic farming. In addition to pomegranates, figs, olives, carob and grapes are also grown.
- Producers: Together with his family, Manolo Jiménez Perez runs his small one-hectare organic farm in the Valle del Guadalhorce near Málaga. He is working intensively on how the scarce resource of water can be used as sparingly as possible and is working on a system to collect the naturally available moisture in the Guadalhorce Valley. He is also adapting his crops step by step to the location and climatic changes. Instead of withered avocado trees, he has planted fig trees, as well as pomegranate and carob trees, which cope comparatively well with the prevailing climate. He grows wild vines and grafts them with varieties he has selected to create plants that are as resilient as possible. Manolo also likes to experiment with symbiotic relationships between crops and learns from year to year. Manolo is a member of Guadalhorce Ecológico, a cooperative that has joined Tierra y Libertad, our partner cooperative in Andalusia.
