The natural orange wine "Ninfa" is produced by our partner cooperative Valdibella from the Sicilian grape variety "Catarratto". As an uncompromising natural wine, it is fermented spontaneously with naturally occurring yeast fungi from the vineyard and pressed entirely without sulphur. In contrast to conventional wines no chemicals are used in the production process. The result is an original, characteristic wine that can be enjoyed as an aperitif wine or with main courses.

Taste and use
This is what makes the Sicilian natural orange wine "Ninfa" so special:
- Taste: The "Ninfa" is a characteristic orange wine with a strong color and structure that impresses with its unique, fruity aroma profile of ginger, apricots and pears. It presents itself with a consistent minerality as well as a lively and surprising taste. Compared to the Natural white wine "Isolano" Ninfa" is aromatically more complex and full-bodied, but somewhat more accessible and milder than the Nature Orange Wine "Sulle Bucce".
- Quality features: Spontaneous fermentation. Alcohol content: 12%. The natural wine "Ninfa" is vegan. Spontaneously fermented and made entirely without sulphites, it is an uncompromising natural wine. Because it has been fermented on the skins for quite a long time, you can feel fine tannins on the finish. The "Catarratto" grapes are harvested by hand at the beginning of September. After pressing, the wine is fermented with yeasts naturally occurring in the vineyard and cellar and left on the skins for 10 to 12 days. This so-called "mash fermentation" is the main difference in the production of orange wine and white wine. In contrast to conventional wines, no chemicals are used for "Ninfa". The sulphite permitted in organic wines is also completely omitted.
- Use: The "Ninfa" can be enjoyed as an aperitif wine, but also pairs well with main courses.
Cultivation and ecology
This is how the grapes for the Orange Wine "Ninfa" are grown:
- Cultivation method: Organic farming. Without irrigation. The sprays permitted in organic farming are used only minimally. Here you can find our Blog post to the natural wine from Valdibella.
- Producers: Giuseppe Montalbano is a member of the Valdibella cooperative. Valdibella uses the "Addio Pizzo" label to declare that it does not pay protection money to criminal organizations.
