The "Kerasos" is a very balanced, accessible natural wine made from "Nero d'Avola" grapes, which are grown on the chalky soils around Camporeale without irrigation. The fruity aroma is unmistakable, hence the name Kerasos, Greek for cherry. This wine is fermented spontaneously with naturally occurring yeasts from the vineyard and pressed by our Sicilian partner cooperative Valdibella. In contrast to conventional wines no chemicals are used in the production process. The wine goes wonderfully with a plate of "Timilia" pasta.

Taste and use
This is what makes the Sicilian natural red wine "Kerasos" so special:
- Taste: The red "Kerasos" is a very well-balanced, warm and soft wine. On the nose, the natural red wine has a characteristic note of cherries and red fruits as well as a pleasant, slightly balsamic note. Compared to the Respiro" natural red wine the "Kerasos" is less complex and therefore somewhat more accessible.
- Quality features: Spontaneous fermentation. Alcohol content: 13.5%. Grape variety: "Nero d'Avola". This wine is vegan. "Nero d'Avola" is a late grape variety. The grapes are harvested by hand at the beginning of October. After pressing, the wine is fermented spontaneously with naturally occurring yeasts and left on the skins for 8 to 12 days. Unlike conventional wines, no chemicals are used in the production process. After fermentation, the wine matures in steel tanks before being bottled. At the very end, the "Kerasos" is stabilized with a very small amount of sulphur.
- Use: This red wine is best served at around 18°C and goes wonderfully with a plate of pasta with tomato sugo.
Cultivation and ecology
This is how the grapes for the red natural wine "Kerasos" are grown:
- Cultivation method: Organic farming. Without irrigation. "Nero d'Avola" is a famous grape that is widely cultivated in Sicily. The sprays permitted in organic cultivation are used only minimally. The vines of this red wine grow on very nutrient-poor soil. Without irrigation, this produces firm, small grapes that are suitable for processing without additives. - Producers: Pietro Scardino, Giuseppe Montalbano and Salvatore Stellino are members of Valdibella. In addition to various grape varieties, they grow pomegranates, apricots, lentils, tomatoes and much more on their farms. The grapes are harvested by hand by the families and local harvest workers. Valdibella uses the "Addio Pizzo" label to declare that they do not pay protection money to criminal organizations.
