This natural white wine is made from the old Sicilian grape variety "Catarratto Extra Lucido", which Massimiliano Solano cultivates in Camporeale. The grapes are spontaneously fermented by our partner cooperative Valdibella with naturally occurring yeast fungi from the vineyard and pressed with a minimal dose of sulphur. Unlike conventional wines, no chemicals are used in the production process. The result is an original white wine with mineral notes on the finish.

Taste and use
This is what makes Sicilian natural white wine so special:
- Taste: For a natural wine, the "Isolano" is very accessible: it has a spicy bouquet, a pleasant fruitiness and a mineral finish.
- Quality features: Spontaneous fermentation. Alcohol content: 12.5%. This white wine is vegan. The grapes are harvested by hand at the end of September. After pressing, the wine is fermented spontaneously with naturally occurring yeasts from the vineyard and cellar and left on the skins for 10 to 12 days. Unlike conventional wines, no chemicals are used in the production process. Only at the very end is the "Isolano" stabilized with a very small amount of sulphur. At a maximum of 15 mg per liter, the amount of sulphur is 10 times below the limit for organic white wines.
- Use: The "Isolano" is perfect as an aperitif, e.g. with roasted "Tuono" almonds or as an accompaniment to light vegetable or fish dishes.
Cultivation and ecology
This is how the grapes for the "Isolano" are grown:
- Cultivation method: Organic farming. Without irrigation. "Cataratto Extra Lucido" is an old grape variety from western Sicily. It is very resistant to many fungal diseases and is therefore well suited to organic cultivation. Valdibella allows the vines to grow freely without tying them up. This so-called "gobelet training" of the vines is an ancient cultivation technique that was already practiced by the Romans and Greeks. It is quite labor-intensive because each plant has to be pruned with particular care, but this method produces high quality grapes. - Producers: Massimiliano Solano is president of the Valdibella cooperative and tirelessly researches the condition of the soil and plant life on his farm. In addition to the cultivated plants, he also knows every grass and weed that grows on his farm. Valdibella uses the "Addio Pizzo" label to declare that they do not pay protection money to criminal organizations.
