Although olive trees are robust, they also suffer from the increasing dry periods. This makes it all the more important to protect the soil by covering it all year round. For producer Begoña, it is therefore clear: "Only if the soil is healthy can the olive trees thrive and we can produce high-quality olive oil that is both organic and tasty."

Taste and use
This is what makes Andalusian olive oil so special:
- Taste: It is an accessible, fruity extra virgin olive oil with little bitterness and a slight spiciness.
- Quality features: The olives for this oil are harvested early and taken to the oil mill immediately afterwards, where they are cold-processed. This produces a genuine extra virgin oil that deserves its name. This is pumped into steel tanks and only bottled when required. This oil consists of 80% of the soft olive variety "Arbequina". In addition, a proportion of "Picual" olive oil from partner companies is always added. The "Picual" olives contain a higher proportion of polyphenols, whose antioxidant effect helps to maintain the high quality of the oil in the long term.
- Use: For salads, for refining various dishes or for lightly sautéing vegetables.
Cultivation and ecology
This is how the olives are grown:
- Cultivation method: Organic farming. Promoting biodiversity between the trees and year-round ground cover, including wild fennel and naturally growing legumes.
- Producers: Begoña Cosín and Rafael García and Rafael's siblings have taken over the 14-hectare olive grove near Córdoba from Rafael's father and started to cultivate it according to agroecological principles. They are not only concerned about respectful cultivation, but also about marketing: they want short and transparent supply chains and direct contact with consumers. Rafael is the founder of Tierra y Libertad, our partner cooperative in Andalusia, and says of his business: "We are committed to a very political form of agriculture: our aim is to bring food production back into people's everyday lives." The "Picual" olives come from 4 trusted producers who have their olive oil processed in the same mill under the same conditions.
