Taste and use
This is what makes Sicilian "Trapanese" pesto so special:
- Taste: Raw tomatoes, roasted and salted almonds, aromatic basil, olive oil and a little garlic are the basic elements of a good pesto from Trapani. However, Valdibella has rounded off the taste of this pesto in its own way with almond paste and a little mint.
- Quality features: This pesto with high-quality ingredients is mildly flavored and refined with the natural preservative "Femminello" lemon juice.
- Use: This pesto is traditionally eaten with Busiate pasta, but is also an excellent sauce for all our "Timilia" pasta. For a longer shelf life, we recommend covering the pesto well with olive oil in an opened jar, resealing it and refrigerating it.
Cultivation and ecology
This is how the pesto ingredients are grown:
- Cultivation method: Organic cultivation.
- Producers: The tomatoes for this pesto are grown by Giorgio Battaglia. Ignazio Costanzo supplies the "Tuono" almonds, Pietro Mulè the herbs and Giovanni Argiroffi the aromatic "Femminello" lemon juice. They are all members of the Valdibella cooperative. The expansion of the product line by Valdibella with ingredients from its own value chain enables the producers to achieve greater diversity in cultivation and diversification in the sale of individual products. Valdibella uses the "Addio Pizzo" label to declare that it does not pay protection money to criminal organizations.
This is how the price is made up
The members of the Valdibella cooperative receive 0.60 euros per kilo of tomatoes, 0.90 euros per kilo of olives and 2.30 euros per kilo of unshelled almonds.

This pesto is a real surprise! Visually not entirely convincing, but the taste is wonderful, with fresh tomatoes and crunchy almonds, well seasoned, quickly used up... very tasty and special, the consistency cannot be compared with "conventional" pestos (coarser pieces)!
