The pistachios used come from the innovative organic farm of Gumersino and Violeta in the province of Granada. Before further processing, the kernels are only lightly roasted at low temperatures. The perfect puree to spice up the color and taste of your aperitif or dessert buffet!

Taste and use
That's what makes this Andalusian pistachio puree so special:
- Taste: This pistachio puree made from very aromatic "Kerman" pistachios has a strong taste.
- Quality features: The "Kerman" pistachio variety is well suited to the climate of the Altiplano near Granada. They are shelled and lightly roasted in Gumersindo and Violeta's small processing plant. At Vegavilanos in Almería, the pistachios are processed into a creamy paste with the addition of a little sunflower oil.
- Use: Enjoy the pistachio puree on its own or mixed with a fluffy butter as an aperitif spread or use it in a dessert variation of your choice.
Cultivation and ecology
This is how pistachios are grown:
- Cultivation method: Organic farming. Diverse undersowing with legumes in the spring and careful incorporation into the soil in the fall. In addition to pistachios, olives, cherries, walnuts and vegetables are also grown on the farm.
- Producers: Gumersindo Sánchez and his family converted their 12-hectare organic farm in the province of Granada to organic farming in 2014. Since then, they have been testing many innovative production methods. He was one of the first to introduce pistachio cultivation to the region: it is one of the few crops that can cope with the harsh climate and salty soils of the Altiplano near Granada. This makes pistachios a welcome alternative to olives and almonds, bringing more added value to the region. Although the farm is still under construction, some neighbors are already interested in converting to organic farming. Gumersindo is happy to support them. He is a member of Tierra y Libertad, our partner cooperative in Andalusia.
