The Blunier-Hanimann family's experiment with the biodynamic cultivation of durum wheat in Domleschg was a complete success. Taste and use

That's what makes these Swiss pizzoccheri so special:

  • Taste: The kräftigen wholemeal pasta has a slightly nutty flavor that comes from buckwheat.
  • Quality features: Both the durum wheat and the buckwheat in these pizzoccheri come from Graubünden. This is a rarity: organic durum wheat from the Grisons!
  • Use: Cook for 8-12 minutes in salted water. Traditionall, pizzoccheri are served with potatoes, savoy cabbage, other vegetables if desired, sage leaves and cheese.

Cultivation and ecology

Buckwheat and durum wheat are grown in this way:

  • Cultivation method: Biodynamic agriculture. Buckwheat is a crop that is ideal for organic cultivation. The white flowering buckwheat fields provide a welcome source of food for many insects. In addition, buckwheat does not require fertilizer - on the contrary: it has the ability to release phosphorus from the soil, which benefits the subsequent crop. In 2021, Georg Blunier tried growing durum wheat in Domleschg for the first time and was successful.
  • Producers: In addition to the cultivation of ancient grains, a herd of Rhaetian grey cattle grazes on the extensive grassland of the Dusch organic farm. The animals spend the summer on the alp. The pastures are home to numerous old high-stem trees, whose fruit is used to produce various specialties for the farm's own use and for sale. Georg Blunier also experiments with mixed crops: for example, he grows camelina together with lentils and peas. A few chickens, pigs and goats round off the varied picture on the farm. The young Blunier-Hanimann family is working intensively on how to reconcile diverse agriculture with economic realities. This is urgently needed to ensure that small mountain farms have a future. Georg Blunier says of his first contact with Crowd Container: "It's rare that you can talk to the same people about agriculture and trade and also get on well. That's fun!"
