These almonds are grown by Gumersindo and Violeta on the barren soils of the plateau in the Andalusian province of Granada without the use of fertilizers or pesticides. They are then painstakingly separated from their hard shells and gently roasted in their small processing plant. The famous almond variety "Guara" has a fine, sweet and buttery taste. A perfect accompaniment to an aperitif or as a snack between meals.

Taste and use
That's what makes these Andalusian salted almonds so special:
- Taste: These almonds have a sweet, buttery taste and are pleasantly lightly salted.
- Quality features: Most of the almonds are of the Spanish variety "Guara". Some are also unknown local varieties that grow on old trees. The almonds are peeled in a small artisanal machine with a lot of manual work, sorted out and then gently roasted at low temperatures. Due to the manual shelling process, some almonds may be slightly cracked.
- Use: The salted almonds are perfect for an aperitif or as a small snack between meals.
Cultivation and ecology
This is how almonds are grown:
- Cultivation method: Genetically diverse cultivation of different varieties, without tillage and without the use of fertilizers and pesticides.
- Producers: Gumersindo and his family have been practising organic farming on their 12-hectare farm in the Altiplano of Granada province since 2014. These almonds grow on his family's 1 hectare of land, which he now cultivates. Gumersindo's father planted the almond trees they have today. The variety is mainly the widespread "Guara" variety, but also the old "Mayo" variety. When they went to the fields in the region and saw an almond tree they liked, they grafted it onto their own trees. Over the years, this almond plantation developed through observation and adaptation to the environment, letting the soil do its own work. Gumersindo and Violeta have invested in a small shelling machine to avoid larger shelling companies and thus prevent mixing with almonds from unknown producers. They painstakingly separate small quantities of almonds from their hard shells and sort them out by hand. Gumersindo also produces the roasted pistachios that we are also offering in this bulk order.
