So-called "Siccagno" tomatoes are only watered with collected rainwater in exceptional cases, which not only protects the environment but also gives them a particularly intense flavor. Giorgio Ferrara and the La Rinascita cooperative in the Sicilian hinterland grow four varieties of tomato, which La Rinascita processes into a fine organic passata. La Rinascita guarantees regular working conditions for all harvest workers and has been committed to transparency and local development beyond the shadow economy for many years.

Taste and use

That's what makes this Sicilian tomato passata so special:

  • Taste: The tomatoes are grown organically and always without irrigation using the so-called "Siccagno" method. This gives the passata a particularly intense flavor.
  • Quality features: The passata consists of the four tomato varieties "Mini Marzano", "Pizzutello", "Corleonese" and "Patatarello", which are processed by La Rinascita on professional equipment. The end result is therefore balanced and slightly more viscous than usual.
  • Use: The tomato passata is already somewhat concentrated and is therefore ideal for the pizza topping. It can also be cooked briefly if desired. There are just three ingredients in a traditional sugo: Olive oil, coarsely chopped onions and passata.

Cultivation and ecology

This is how the tomatoes are grown:

  • Cultivation method: Organic farming. The tomatoes are always grown without irrigation ("Siccagno" method). If temperatures rise to 40°C or more for several weeks in summer, the tomatoes are supplied with water by means of efficient and water-saving drip irrigation. Only rainwater collected in winter and spring is used for irrigation.
  • Producers: The tomatoes for this passata are grown and processed by Giorgio Ferrara in San Giuseppe Jato and the La Rinascita cooperative in the Valle d'Olmo in the Sicilian hinterland. La Rinascita guarantees us regular working conditions for all harvest workers. Unfortunately, this is not at all a matter of course in southern Italy, where thousands of migrants toil in the fields for starvation wages every year. The cooperative has been campaigning for transparency and local development beyond the informal economy for many years. It is also a member of our partner cooperative Valdibella, which markets some of this passata.

This is how the price is made up

Giorgio Ferrara and the producers at La Rinascita receive 0.45 euros per kilogram for the tomatoes. This is around four to five times the conventional market price.

    Once opened, store in the refrigerator and consume within three days.
    Vacuum seal of the bottles cracks when first opened. Do not use if the vacuum is not intact.
