• Quality features: After cultivation, the peperoncini are crushed, gently dried, cored and then ground. This ensures that the powder retains its flavor and is not just hot.
• Use: Chilli powder is used in the kitchen wherever spiciness is welcome: be it in the classic "Chili con/sin Carne"in an Indian curry dish or dal, to season oven-baked vegetables or for a surprisingly spicy chocolate dessert.

Cultivation and ecology

This is how the chili plants are grown:

• Cultivation method: Organic farming. The peperoncini are grown together with peppers, eggplants and courgettes.
• Producers: Piero Mulè is a member of the Cooperativa Valdibella. He has his own farm and also cultivates the fields belonging to Valdibella. Valdibella uses the "Addio Pizzo" label to declare that it does not pay protection money to criminal organizations.
