Our Sicilian hummus is made from chickpeas of the "Sultano" variety, which are grown in rotation with our "Timilia" durum wheat. These chickpeas not only enrich our soil with nitrogen, but also provide a healthy source of protein. Combined with our delicious almond butter, our hummus is an incomparable delight.

Taste and use

That's what makes this Sicilian hummus so special:

  • Taste: The chickpeas have a Very mild, slightly nutty aroma. Instead of tahini, the Valdibella cooperative uses its almond butter, which has a fine almond aroma. The hummus is refined with extra virgin olive oil, lemon juice, onions, garlic, basil and mint.
  • Quality features: This hummus has a slightly firmer consistency than usual, but impresses with its unique freshness.
  • Use: Hummus is a true all-rounder and tastes great in various combinations: Be it in combination with bread or as a vegetable dip.

Cultivation and ecology

This is how chickpeas are grown:

  • Cultivation method: Organic farming. The chickpeas are grown on the fields of the Valdibella producers, alternating with "Timilia" durum wheat and other cereals. Through this crop rotation, legumes such as chickpeas and lentils naturally return the nitrogen to the soil that cereal cultivation has removed. Chickpeas are sown in January and harvested in summer.
  • Producers: Both the chickpeas and the almonds are grown by various members of the Valdibella cooperative. After harvesting, the chickpeas are dried and cleaned in a local grain mill. Valdibella has the almonds peeled and then processes them into light almond paste in its own factory. The olives used for the olive oil come from various members of our partner cooperative Valdibella and are pressed into oil in Sicily. The hummus is produced by the Valdibella cooperative. The cooperative uses the "Addio Pizzo" label to declare that it does not pay protection money to criminal organizations.

This is how the price is made up

Mario Sciortino receives 1.00 euro per kilogram of uncleaned chickpeas. The producers receive 2.30 euros per kilogram of unpeeled almonds.
