• Quality features: This thyme was already growing wild when L'Arcolaio leased the abandoned land in the Monti Iblei in the hinterland of Siracusa. The organic herbs are carefully dried in the small laboratory in Canicattini Bagni by the employees of the L'Arcolaio cooperative.

Cultivation and ecology

This is how thyme is grown:

• Cultivation method: Organic farming.
• Producers: The L'Arcolaio cooperative offers migrants and ex-prisoners the opportunity of legal employment in food processing. Together with migrants and ex-prisoners, the social entrepreneurs grow various herbs and vegetables on several hectares. By processing almonds in the Siracusa prison and growing herbs in the Monti Iblei, L'Arcolaio is creating regular jobs in agriculture and food processing.
