White pepper is obtained from ripe red peppercorns. Compared to black pepper, it has a more balanced flavor profile and smells slightly fermented. The pepper plants for our white pepper also grow in organic agroforestry systems between coconut palms, coffee bushes and many other cultivated plants.

Taste and use
That's what makes this pepper from Kerala so special:
- Taste: Real white pepper smells slightly fermented and has a more balanced flavor profile than black pepper.
- Quality features: The ripe red pepper fruits are harvested for the white pepper. The pepper is then fermented in a water bath and the flesh is removed. The seed skin is also peeled off, leaving the white peppercorn behind. Industrial white pepper is often produced by peeling the black seed skin from black pepper. However, the taste cannot be compared with that of real white pepper.

Cultivation and ecology
This is how the pepper is grown:
- Cultivation method: Cultivation in multi-stage agroforestry systems, without the use of pesticides. The pepper plants for our white pepper also grow in beautiful forest gardens between coconut palms, coffee bushes and many other cultivated plants. The farmers of the "Fair Trade Alliance Kerala" know exactly whether they are growing "Valamkottai", "Karimunda", "Jeerakamundi" or "Panniyoor" pepper. The producers meet at the annual Seed Festival and proudly present the seeds they have brought along to exchange.
- Producers: The small farms of the members of the "Fair Trade Alliance Kerala" are on average just one hectare in size. The farmers grow a wide variety of products for export, for the local village markets, but also for themselves. Many have an additional income because family members work in the city or even abroad and support the farming families.
This is how the price is made up
The producers receive USD 14.95 per kilogram of white pepper. We pay USD 40 per kilogram of pepper.
