The "Viognier" grape is considered a difficult variety to cultivate, but with exceptional results. In loamy soil and on vines that are not irrigated, the "Mirlo" is produced - a pure, authentic "Viognier".

Pedro drinks the "Mirlo" when the sun is approaching the horizon and the temperatures are balmy. It also goes well with a seasonal vegetable dish. He recommends drinking it not too cold, at around 8 degrees, so that it can develop its full complexity.

Tasting note:
The "Mirlo" is an accessible white wine with a tropical fruit note. It is full-bodied, with natural acidity and a dry finish. This pure "Viognier" goes perfectly with an aperitif or a light meal. Fermentation takes place in steel tanks. The wine then rests on its lees for 4 months in stainless steel tanks. It is lightly filtered and remains in the bottle for at least 2 months.
Producers:
José and Pedro are childhood friends and producers who have dedicated themselves to sustainable viticulture under the name "Tierra Savia". On 10 hectares in the Sierra Norte de Sevilla, they grow a wide range of old and new varieties, paying particular attention to the quality of the soil. The soil between the vines remains covered with vegetation throughout the year. The vines are up to 150 years old and are only cultivated at all thanks to "Tierra Savia". In their wine cellar, José and Pedro produce over 30 small batches from the harvest every year. They use amphorae from the region, some of which are up to 400 years old. When we asked José why they do this, he simply said: "We are convinced that wine has a memory!" The two winegrowers are members of the "Tierra y Libertad" cooperative.
