Two curry recipes fresh from Kerala

We have brought back two fresh curry recipes from our visit to producers in Kerala. Let yourself be enchanted by exotic spices and traditional preparation methods and bring a piece of South India into your kitchen.

Vegetable curry à la Beena

The numerous spices immerse you in the world of Kerala's forest gardens.

We found it a little difficult to keep track of this curry, so we numbered the different steps in Beena's order:

1. in a sauce pan

  • Curry leaves
  • 1-2 red onions in slices
  • 2-4 garlic cloves in slices
  • 1-3 small green chilies scored lengthwise
  • Salt

fry everything together in oil, set aside

2. in the pressure cooker

  • 2-4 medium-sized potatoes in pieces
  • 2-4 carrots in pieces

fry in oil, add salt, deglaze with water, cook

Meanwhile:

3. Ginger and Garlic Crush together in a mortar
4. Fresh grated coconut Mix with a little water

Here we have Coconut milk and something Grated coconut mixed in the Nutribullet, but it remains a little grainy
> Alternatively, simply add 500 ml of coconut milk here

5. put the sauce pan from step 1 back on the stove - add between 1-3 teaspoons of each spice to taste

Add everything, remove from the stove & cook a little Garam masala admix

Add no. 3, return to the stove

Mix in no. 2 & 4, season to taste

6. heat the coconut oil in a new, small frying pan

  • Mustard seeds
  • Fresh curry leaves

Add and fry

  • Small, red onions halved
  • A little fresh coriander 

add to fry, spread over the curry as a garnish

Papaya curry (as a side dish) 

1. prepare:

  • 2-3 green, unripe papayas, grated
    Can also be substituted with chayotes, zucchinis or kohlrabi
  • 2-3 red onions in slices
  • Fresh, grated coconut
    Here again we have Coconut milk (300-500ml) with a little Grated coconut mixed in the Nutribullet
  • 1-3 fresh green chilies cut lengthwise
  • Fresh curry leaves
  • Salt

Mix everything in a bowl

2. in a frying pan:

Add the remaining ingredients (from step 1), fry briefly until hot, then simmer over a low heat. The papaya curry can also be served cold.
