The L'Arcolaio cooperative has carefully dried peppers with salt for us so that you can also enjoy these vegetables outside of harvest time. They have a very intense taste and are best soaked briefly in water and rinsed before use.

Taste and use
That's what makes these dried peppers from Sicily so special:
- Taste: These peppers bring the taste of summer and the south to your plate at any time of year.
- Quality features: The peppers are salted in the drying plant and then gently dried.
- Use: They are ideal for cooking in a sauce or in combination with our pulses. As the peppers are dried with salt, they should be soaked briefly in lukewarm water before use and the soaking water poured away. Here you will find a suitable recipe suggestion.
Cultivation and ecology
This is how the peppers are grown:
- Cultivation method: Organic farming.
- Producers: The peppers are grown by the Terramatta cooperative in Ragusa, which is closely linked to L'Arcolaio. L'Arcolaio offers migrants and ex-prisoners the opportunity of legal employment in food processing. This is very important in a region where many migrants arrive and are often employed in agriculture without a work contract and under very poor conditions. "Try our products and you will taste the difference!" says Wally from L'Arcolaio full of self-confidence. Wally is from Gambia and works in the processing center of the L'Arcolaio cooperative.
This is how the price is made up
The peppers are bought from the Cooperativa Terramatta for 1.90 euros per kilogram. Terramatta grows the vegetables collectively on 8 hectares of land.

I used it to spice up a homemade Bolognese sauce - tastes great! A real alternative when there are no fresh Swiss peppers at the weekly market.

Delicious with pasta! We soaked the peppers briefly in hot water and added a few black olives (finely chopped). The peppers were also cut a little smaller. Fry briefly in a pan with olive oil and then add to the warm pasta with the parmesan. Tastes delicious!

These peppers taste the way ripe peppers should taste. Tart, slightly bitter. I like them in combination with pulses, beef and tomatoes (passata).
