Sogenannte «Siccagno»-Tomaten werden nur in Ausnahmefällen mit gesammeltem Regenwasser bewässert, was nicht nur die Umwelt schont, sondern ihnen auch einen besonders intensiven Geschmack verleiht. Vito Scalia und die Kooperative La Rinascita im sizilianischen Hinterland bauen vier Tomatensorten an, die La Rinascita zu einer feinen Bio-Passata verarbeitet. La Rinascita garantiert reguläre Arbeitsbedingungen für alle Erntehelfer*innen und setzt sich seit vielen Jahren für Transparenz und lokale Entwicklung jenseits der Schattenwirtschaft ein.

Taste and use

That's what makes this Sicilian tomato passata so special:

  • Taste: The tomatoes are grown organically and always without irrigation using the so-called "Siccagno" method. This gives the passata a particularly intense flavor.
  • Quality features: Die Passata besteht aus den vier Tomatensorten «Regolino», «Patatarello», «Pizzutello» und «Corleonese», die von La Rinascita auf einer professionellen Anlage verarbeitet werden. Das Endergebnis ist dadurch ausbalanciert und etwas dückflüssiger als gewohnt.
  • Use: The tomato passata is already somewhat concentrated and is therefore ideal for the pizza topping. It can also be cooked briefly if desired. There are just three ingredients in a traditional sugo: Olive oil, coarsely chopped onions and passata.

Cultivation and ecology

This is how the tomatoes are grown:

  • Cultivation method: Organic farming. The tomatoes are always grown without irrigation ("Siccagno" method). If temperatures rise to 40°C or more for several weeks in summer, the tomatoes are supplied with water by means of efficient and water-saving drip irrigation. Only rainwater collected in winter and spring is used for irrigation.
  • Producers: Die Tomaten für diese Passata werden von Vito Saclia in Piana degli Albanesi und der Kooperative La Rinascita in Valledolmo im sizilianischen Hinterland angebaut und verarbeitet. La Rinascita garantiert uns reguläre Arbeitsbedingungen für alle Erntehelfer*innen. Dies ist leider überhaupt keine Selbstverständlichkeit in Süditalien, wo jedes Jahr Tausende von Migrant*innen zu Hungerlöhnen auf den Feldern schuften. Die Kooperative setzt sich seit vielen Jahren für Transparenz und lokale Entwicklung jenseits der Schattenwirtschaft ein. Sie ist gleichzeitig auch Mitglied unserer Partnerkooperative Valdibella, die einen Teil dieser Passata vermarktet.

Für die Tomaten bekommen Vito Scalia und die Produzent*innen von La Rinascita 0.45 Euro pro Kilogramm. Dies entspricht ca. vier bis fünf Mal dem konventionellen Marktpreis.

    Store in a cool and dry place. Protect from sunlight.
    Once opened, store in the refrigerator and consume within three days.
    Vacuum seal of the bottles cracks when first opened. Do not use if the vacuum is not intact.

      I have ordered several times and always enjoy ordering again. You can still taste the tomatoes. Tomatoes that have ripened in the sun. Super fine.
