Verjus is an acidic juice produced by squeezing unripe grapes. It is used for seasoning in a similar way to vinegar or lemon juice. The biodynamically grown grapes for this verjus come exclusively from the Rheinau estate.

Taste and use
That's what makes this Swiss Verjus so special:
- Taste: The verjus smells of fresh grapes with a hint of green apple. The taste is also reminiscent of fresh green fruit.
- Quality features: Verjus is much milder than vinegar. The juice is also used as a digestive aid and remedy. The juice is produced without additives, but contains sulphites, which are naturally present in the grapes; the content is usually around 10 mg/l.
- Use: Verjus can be used as a condiment in everyday cooking and serves as a substitute for lemon juice or vinegar.
Cultivation and ecology
This is how the grapes are grown:
- Cultivation method: Biodynamic agriculture. The vines come from the monastery garden of the Rheinau estate, in the northernmost part of the canton of Zurich. Various fungus-resistant grape varieties grow here. In most years, not only systematic pesticides but also copper, which is permitted in organic farming, are not used. In addition to viticulture, the Rheinau estate also produces cereals, milk, meat, vegetables, honey, potatoes, standard fruit and seeds for cereals and vegetables. It is a carefully tended, networked system of flower and herb meadows, hedges and avenues, which opens up and secures habitats for a diverse world of wild plants, insects, birds and small animals.
- Producers: The 121 hectares of the Rheinau estate are farmed by a tenant community of five parties who are committed to diverse, biodynamic agriculture. The community has set itself the goal of achieving a balance between economic opportunities and the needs of nature and people. Profits generated from Gut Rheinau are fully reinvested in the soil, the animals and in human coexistence.
