Original Mix Vegetable Curry

Indisches Gemüsecurry

What is needed
Tomatoes (Chopped) – 3 Large
Onions (Chopped) – 2 Medium
Potato (Chopped) – 2 Medium
Carrot (Chopped) – 2 Medium
Capsicum (Chopped) – 1 Medium
Cauliflower (Small Florets) – 150 gms
French Beans (Chopped) – 150 gms
Peas – 150 gms
Cashew nuts – 100 gms
Butter – 2-3 Tablespoons
Cream – 2-3 Tablespoons
Oil – 5-6 Tablespoons
Cinnamon Powder – 1 Tablespoon
Red Chili Powder – 1 Tablespoon
Coriander Powder – 1 Tablespoon
Cumin Powder – 1 Tablespoon
Kasoori Methi – 1 Tablespoon
Turmeric Powder – 1 Teaspoon
Nut Mug (Grinded) – 1 Teaspoon
Nut Mace (Crushed) – 1 Teaspoon
Garam Masala – 1 Teaspoon
Ginger (Minced) – 1 Inch
Garlic (Minced) – 3-4 Cloves
Coriander – As required
Salt To Taste

How I prepare

  • Heat a tablespoon of oil in a pan, put in tomatoes, cashew nuts and onions.
  • Cook on medium flame until tomatoes are mushy.
  • Take off the flame, let it cool down and Grind it to make a consistent paste and put aside.
  • Heat remaining oil in a pan, add ginger and garlic, sauté until raw smell is gone.
  • Then add potato, cauliflower, beans and carrots and fry until light golden.
  • Add in the consistent paste, salt, turmeric powder and the red chili powder. Mix well, once it boils, cover and cook for 15 mins on medium flame.
  • Now add in the capsicum and the peas. Cover and cook for another 10 mins.
  • Add cumin powder, coriander powder, cinnamon powder, crushed kasoori methi, nut mug, nut mace and garam masala. Mix well, cover and cook for 5 mins.
  • Add cream, mix well garnish with coriander and serve hot with Chapati or Naan!
